Elsie's Brown Sugar Rhubarb Cake |

Delicious coffee cake type dessert that my Grandma Elsie used to make for us. Ingredients:
2 cups finely cut rhubarb |
1 1/2 cups brown sugar |
1/2 cup butter |
1 egg |
1 teaspoon baking soda |
2 cups flour |
1 teaspoon vanilla |
1 cup sour milk (add 1 tbs vinegar to milk) |
1/4 cup brown sugar |
1 teaspoon cinnamon |
Directions:
1. Mix first 8 ingredients together in a bowl. 2. Dump into a greased 9x13 pan. 3. Sprinkle on the 1/4 c brown sugar and then the cinnamon. 4. Bake at 350 30-40 minutes or until cake springs back when touched. 5. Serve warm. |
