I got this recipe from my husband, who is from Guadalajara, Mexico. This is corn on the cob covered with sour cream, sprinkled with cojita cheese and pepper flakes. Delicious! Ingredients:
4 corn on the cob (cooked-grilled or boiled) |
4-5 tablespoons sour cream or mayo |
4-5 tspns crushed red pepper flakes (pizzeria style pepper flakes) |
1-1/2 cup cojita cheese |
2 limes cut into wedges |
Directions:
1. 1. Cook corn on the cob. 2. 2. Take sour cream and spread generously on all sides of the corn. Sprinkle desired amount of pepper flakes (i prefer more, but you can change to your taste). Then sprinkle generously with Cojita Cheese on all sides of corn and squirt some lime juice on them. Enjoy!! |
