Ingredients:
4 to 6 ounce(s) andouille sausage, cut in half and sliced |
1 1/2 pound(s) boneless skinless chicken, cut into cubes |
1 medium onion, diced |
1 rib celery, diced |
1 medium green bell pepper, diced |
1 medium red bell pepper, diced |
3 clove(s) garlic, minced |
1 tablespoon(s) olive oil, if needed |
2 to 4 tablespoon(s) creole seasoning |
1 14 1/2-ounce can(s) fire-roastee tomatoes |
1 15 1/2-ounce can(s) black-eyed peas |
1 14-ounce can(s) chicken broth |
1/2 teaspoon(s) hot sauce |
1 1/2 cup(s) frozen shoepeg corn |
2 cup(s) frozen cut okra |
1 bay leaf |
Directions:
1. Brown andouille sausage in a Dutch oven or soup pot. Remove. 2. Saute chicken in same pot until just done. Remove. 3. Saute the onion, celery, bell peppers and garlic in the same pot, adding the olive oil if necessary. Once they are brown, add the Creole seasoning. Stir and cook until fragrant. 4. Add remaining ingredients, except for the chicken and sausage. Bring to a low boil and cook covered for 20 minutes. 5. Return chicken and sausage to the pot. Simmer covered for 20 more minutes. Adjust seasonings as needed and enjoy. |
