Back when I saw Elia make these on Top Chef, I knew I had to make them someday. Such a delicious (and unexpected!) combination. I also mixed finely chopped pecans with the bacon. Ingredients:
large basket of fresh strawberries, hulled then cut in half |
3/4 cup heavy cream |
1/4 cup mascarpone |
1 tbs honey (or to taste) |
1/2 to 3/4 tsp chopped rosemary |
1/4 to 1/8 lb of chopped pancetta or high quality bacon (fried crisp) |
Directions:
1. Whip the heavy cream, then incorporate the rest of the ingredients with a whisk. Chop the rosemary and add it at the end. 2. Then with a piping bag, squeeze cream over strawberries that you have previously cut in half and sprinkle on top a little bit of chopped crispy pancetta (or bacon). |
