Yummy, and quick weeknight meal. One of our favorites! Ingredients:
1/2 cup flour |
1 -1 1/2 lb chicken tenderloins, about |
3 eggs |
1/2 cup parmesan cheese |
1 tablespoon parsley |
1/2 teaspoon salt |
1 dash pepper |
2 tablespoons olive oil |
1 tablespoon butter |
3 tablespoons lemon juice |
Directions:
1. Place flour in a shallow bowl. 2. Roll chicken in flour to coat. 3. Beat eggs, parmesan, parsley, salt& pepper until foamy. 4. Heat olive oil& butter in skillet over med. 5. high heat. 6. Dip chicken is egg mixture. 7. Place in skillet, cook chicken until browned, about 3 min per side. 8. Squeeze lemon juice on chicken and cook 1 min. 9. longer. |
