Elegant Plum Raspberry Crumble |

An elegant twist on plain old cobbler. The plums and raspberries go perfectly together! Use fresh raspberries and fresh orange juice. Simply delicious! Ingredients:
2 pounds red plums, cut into wedges |
2/3 c white sugar, divided |
1 1/4 c whole wheat flour |
2 tbsp orange juice |
1/2 pint fresh raspberries |
1/3 c brown sugar |
1/4 tsp kosher salt |
8 tbsp butter |
1/2 c dry oats |
1/2 c sliced almonds, plus extra for sprinkling |
Directions:
1. Preheat oven to 350 2. In large bowl combine sliced plums, 1/3c of sugar, 1/4 c of flour, and orange juice. toss well. add raspberries and toss lightly. pour into 9x12 baking dish. 3. Combine remaining 1 c flour and remaining 1/3 c sugar, brown sugar, and salt. stir. 4. Add butter and cut with two knives or pastry cutter until crumbly. Pour the mixture into a bowl, add the oats, and work it with your hands until it's in large crumbles. 5. Add 1/2 c of the almonds and mix well. spread topping over plums. sprinkle with a few extra almonds. 6. Bake 40 mins. or until fruit is tender and bubbly and topping is golden brown. Serve warm or at room temp. |
