Low fat, pretty and delicious. Ingredients:
spray cooking oil - olive oil is great |
5 sheets of phyllo dough ( 17 x 12 inches ) |
6 tbs fresh grated parmesan cheese or more if desired |
1 medium eggplant unpeeled |
3 medium firm tomatoes |
1 medium red onion |
4 oz feta cheese |
1 tsp dried oregano |
salt and pepper to taste |
Directions:
1. Spray a baking sheet with cooking oil, 2. Place on a layer of phyllo, spray with oil, add some grated cheese and repeat process with remainder of phyllo sheets. 3. Cut eggplant , onion and tomato into 1/8 inch slices. 4. Arrange on overlapping fashion on phyllo. 5. Spray top of sheet with oil, sprinkle on crumbled feta cheese, a bit more parmesan cheese, salt and pepper and oregano. 6. Bake in preheated 400F about 30 minutes or vegetable tender and golden |
