Ingredients:
1 12oz jar cherry preserves |
6 boneless/skinless chicken breasts |
1/2 teaspoon(s) cinnamon |
1/2 teaspoon(s) ground cloves |
2 tablespoon(s) light corn syrup |
1/2 teaspoon(s) nutmeg |
1/4 cup(s) red wine vinegar |
1/2 teaspoon(s) salt |
1/4 to 1/2 cup(s) toasted toasted/slivered almonds |
Directions:
1. Preheat oven to 325 degrees. 2. Salt and pepper the chicken. Place in long dish lightly coated with cooking spray. Cover with foil and bake 30-45 min. 3. Combine cherry preserves, corn syrup, vinegar, salt, cinnamon, cloves, and nutmeg in saucepan. Heat to boiling, stirring frequently. Reduce heat and simmer 3 min. Add almonds. Keep sauce warm. 4. After chicken cooks, uncover and drain any liquid. Baste with cherry sauce and return to oven 15 min. Serve hot with extra sauce on side. |
