This is a creamy side dish which is very tasty. It is a different way to serve broccoli. Ingredients:
3 cups water |
1/4 cup butter, plus |
6 tablespoons butter (divided) |
2 (6 ounce) packages corn bread stuffing mix |
2 (10 ounce) packages frozen broccoli spears (cooked and drained) |
2 tablespoons flour |
1/2 teaspoon chicken bouillon granule |
1/4 teaspoon salt |
1 1/3 cups milk |
1 (3 ounce) package cream cheese (softened and cubed) |
2 green onions (scallions, sliced) |
1/2 cup shredded cheddar cheese |
1/8 teaspoon paprika |
Directions:
1. In a saucepan over medium heat, combine the water and 1/4 cup butter; bring to a boil. 2. Remove from heat and add the stuffing mix and toss; let stand for 15 minutes. 3. Spoon stuffing around edges of a greased 9 x 13 casserole baking dish. 4. Place broccoli spears in the middle of the dish. 5. In a saucepan over medium heat, melt remaining butter. 6. Add flour, bouillon, and salt; stir to form a smooth paste. 7. Gradually add milk, stirring constantly till thickened. 8. Add cream cheese; stir till melted. 9. Add onions and mix well. 10. Pour over center of broccoli. 11. Cover and bake at 350 degrees for 20-25 minutes. 12. Sprinkle with cheese and paprika. |
