A lovely way to use elderberry flowers! Elderberries havve white flowers and puple-black or red berries. Elderberries are among the most plentiful, useful, and healthful of wild fruits. Ingredients:
elderberry flowers, clusters |
1 cup sifted all-purpose flour |
1 tablespoon sugar |
1 teaspoon baking powder |
2 eggs |
1/2 cup milk |
oil (for frying) |
Directions:
1. Dip washed and drained flower clusters into a batter made by beating next 5 ingredients together. 2. Fry dipped clusters in oil (375*F. on frying thermometer) for 4 minutes, or until they are golden brown. 3. Drain on absorbent paper. 4. Roll in additional granulated sugar. 5. Serve hot. 6. Makes 4 servings. |
