From my recipe files. Ingredients:
2 cups berries |
3/4 cup sugar |
1 tablespoon flour |
2 tablespoons lemon juice |
3/4 cup water |
3/4 cup flour, sifted |
1 1/2 teaspoons baking powder |
1/2 teaspoon cinnamon |
1/2 teaspoon salt |
1/4 cup sugar |
1/4 cup lemon peel, grated |
1/4 cup milk |
1 egg |
Directions:
1. Combine all the berry mixture ingredients, heat them gently and keep them warm while you make the dumplings. 2. make the dumplings: Add the other dry ingredients to the sifted and measured flour. 3. Mix the milk and the egg in a small bowl and stir them into the flour combination until the dough is just blended. 4. Now pour the hot berry mixture into a casserole and drop in small spoonfuls of the dumpling batter. 5. Bake the dish at 400*F for 25 to 30 minutes until the pastry balls are lightly browned. 6. Serve the dessert warm with cream or vanilla ice cream. |
