My talented daughter Elan must have gotten the cooking bug from me and created this recipe when she was 10 years old. Enjoy! Ingredients:
pam cooking spray |
2 eggs |
1/3 cup of shredded cheese |
3 slices deli ham, thinly sliced |
2 pinches chives, dried or 2 pinches fresh chives |
pepper |
1 pinch red pepper flakes |
1/4 teaspoon pickapeppa sauce |
1 small roma tomato, diced |
3 ready sliced jalapenos, finely diced |
1 button mushroom, washed and sliced |
Directions:
1. In a mixing bowl, crack the eggs, add chives, pepper, red pepper flakes, and picappepa. Mix well. 2. Heat frying pan sprayed with Pam on stove over medium heat, add egg ingredients. As edges are looking cooked then add cheese and ham, tomato, jalapenos, mushroom. 3. When eggs are slightly solid, flip egg in half and cut with spatula in half again. Continuing cooking till eggs are cooked and cheese has melted. |
