Elaines Super Choco-fruit And Candy Cake |

A delicious, rich chocolate cake, arranged in reminiscence of the colorful hats worn by ladies of yonder years, in attendance at the Easter Parade! Ingredients:
1 1/2 cups cake flour |
3/4 tsp baking soda |
1/2 tsp baking powder |
1 tsp pure vanilla extract |
1/3 cup stevia (natural sugar substitute) |
1/4 tsp salt |
1/2 cup pure cocoa |
3 whole eggs |
2/3 cup olive oil |
1 cup cold water |

chocolate fudge icing |
white icing |
blueberries |
blackberries |
Directions:
1. Combine all dry ingredients 2. Add the eggs 3. Add the oil, water, & vanilla 4. Combine well. 5. Grease and flour one 8 inch cake pan 6. Grease and flour one 6 inch baking dish 7. Grease and flour one 4 inch Brulle dish, oven-proof 8. Fill each about 1/2 full. 9. Bake the 8 inch dish at 350*F for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean 10. Bake 6 inch pan at 350*F for 20-25 minutes 11. Bake the 4 inch dish 325*F for10 to 15 minutes. 12. Cool completely in the pans. 13. Decorate with chocolate icing, all three layers 14. Pipe white icing around the base of all three layers as shown. 15. Add piped flowers of white icing as illustrated 16. Garnish the cake with fruit and candies as desired. 17.
