Elaines Stuffed Bell Peppers |

Fresh green Bell peppers, filled with rice, onions, and tomatoes…garnished with sliced mushrooms, and mildly spiced, make this a delicious side dish. Ingredients:
6 –8 green bell peppers |
1 1/2 cups cooked rice (white or brown) |
1/2 tsp italian spice |
salt & pepper to taste |
1/4 vidalia or spanish onion, finely chopped |
3 to 4 fresh tomatoes |
butter to preference |
Directions:
1. Cut the tops off the bell peppers, and remove the seeds and white sections 2. (Since these tops will not be used, freeze and save for a pot of soup or stew later on!) 3. Prepare the rice by adding the onion, tomato, Italian spice, salt & pepper 4. Slice a few mushrooms for garnish 5. Fill the peppers with the rice mixture 6. Add a dab of butter on top of each stuffed pepper 7. Place three pieces of mushroom on top of the butter 8. Bake at 350*F 30 to 35 minutes, or until the peppers are beginning to brown on the edges |
