Paired with my recipe for the BBQ'd pork ribs, this side is a perfect match. Healthy as well, since peppers are a great boon to helping lower LDL cholesterol, and boosting the good HDH. Ingredients:
2 whole yellow sweet peppers |
2 whole green sweet peppers |
2 whole orange sweet peppers |
4 large shallots |
6 to 8 green onions |
mushrooms, no set amount |
Directions:
1. Slice the peppers into long strips 2. Slice the shallots and onions thinly 3. Slice mushrooms to your preference 4. Place on a hot grill, on a baking sheet or tinfoil. 5. Cook, turning frequently, until peppers are moderately soft, and the shallots are nicely caramelized. 6. Add salt, pepper, whatever- to your taste. |
