Hearty meatballs, made HEALTHY with the addition of oat bran cereal, adding no cereal taste to the meatballs, but providing a great source of natural fiber! Ingredients:
1 1/2 lb lean ground beef |
3/4 cup oat bran cereal, uncooked |
2 whole eggs |
coarse salt |
Directions:
1. Combine all the above ingredients 2. Mix thoroughly 3. Form meatballs approx 2 inches in diameter, and place on ungreased baking sheet 4. Sprinkle with coarse salt 5. Bake at 350*F until nicely browned 6. Add to the chunky sauce OR place on top of finished spaghetti or other pasta dish. 7. Sprinkle grated old cheddar on top and ENJOY! :+D 8. Chef's Note: 9. These meatballs were served with spaghetti and the Chunky Tomato Sauce, along with Caesar salad, with the bacon/cheese appetizers. |
