Idaho Red potatoes, coupled with red onions.. mildly spiced, and fried, make an excellent side dish to compliment any meal!
Ingredients:
4 to 6 medium sized idaho red potatoes
1 large red onion
1 tbsp butter
3 tbsp olive oil
juice of 1/2 lemon
salt & pepper to preference
1/2 tsp garlic powder (not garlic salt)
or, 1 garlic clove, minced
dried parsley for sprinkling
Directions:
1. prepare the pan with olive oil & butter, melted
2. cube the potatoes
3. chop onion coarsely
4. add to pan
5. add salt, pepper and garlic
6. fry until potatoes are lightly browned, then add the lemon juice and continue frying until golden
7. sprinkle with parsely and serve
