The classic bran muffin, stretched and modernized with fresh blueberries and Sultana raisins, sweetened with sugar sub for diabetics. Versatile, and can be normally sweetened with brown sugar! Ingredients:
2 1/2 cups whole wheat flour |
1 1/2 cups white all-purpose flour |
2 1/2 tsp baking soda |
2 tsp baking powder |
1/2 cup packed brown sugar (or sugar substitute for diabetics) |
1/2 tsp salt |
1 tsp vanilla |
1/2 cup canola oil |
6 whole eggs |
1 cup sultana raisins |
1 pint blueberries |
1 1/2 cups bran |
2 1/2 cups water |
Directions:
1. Combine all dry ingredients well 2. add blueberries and raisins; combine well 3. add eggs and oil 4. add the water 5. Stir until all is well mixed 6. preheat oven at 350*F 7. prepare muffin pans with cooking spray 8. fill each section of pans at least 2/3 full 9. Bake for 15v minutes, or until golden brown 10. Served hot or cold, these make an excellent snack. or a great side with breakfast :+D |
