A fast, economical way to make Shepherd’s Pie… delicious, and healthy with the addition of natural wheat bran. Ingredients:
2 lbs lean ground beef |
4 whole eggs |
3/4 cup natural wheat bran |
1/2 vidalia onion, finely chopped |
frozen beans and carrots |
salt & pepper to preference |
7 – 8 new potatoes, boiled, skins on |
butter (enough for mashing with potatoes) |
1/2 to 3/4 cup milk |
Directions:
1. Mix the ground beef, eggs, onions and bran together well 2. Place 1/2 of this into the baking pan 3. Add a generous layer of the frozen vegetables 4. Place the remainder of meat on top 5. Add salt & pepper to your taste preferences 6. In the interim, boil the potatoes in their skins. 7. When the potatoes are cooked, mash them skins and all, with the milk and as much butter as you need to develop a smooth, creamy consistency 8. Place the mashed potatoes on top of the meat, and bake t 350*F for 45 minutes, or until the potatoes are slightly brown, and the meat juices run clear. 9. photos to follow |
