Lovely new potatoes, combined with cheese, onions, garlic, butter, and heavy cream... cooked slowly in the oven. A definite plus for any meal! Ingredients:
3 to 4 medium new potatoes, washed, unpeeled |
1 medium sized spanish onion |
3 large cloves garlic, minced |
mozzarella cheese, shredded (to your preference of amount!) |
old cheddar cheese,shredded (to your preference of amount!) |
1/2 tsp salt |
1/2 tsp cayenne pepper |
1/2 cup heavy cream |
2 1/2 cups buttermilk |
rice flour |
butter |
Directions:
1. slice potatoes thinly 2. Slice the onion thinly 3. Make layers as follows: 4. 1 layer of potato slices 5. 1 layer of onion slices 6. 1 layer of EACH cheese 7. a dollop of butter 8. a thin coating with rice flour 9. continue building the layers in this order until the dish is full. 10. add the heavy cream, and then the buttermilk 11. add the cayenne pepper and salt 12.
