Lovely butternut squash, delicately seasoned and baked to perfection. Served alongside chicken in a potato flour gravy, this is a warm, soothing COMFORT dish. Ingredients:
1 medium butternut squash |
1 tsp pure vanilla extract |
2 tbsp raw sugar plus extra for topping |
salt & pepper to preference |
2 tbsp creamery butter |
Directions:
1. Cut squash in half, lengthwise 2. seed out the hollow ends 3. place 1 tbsp raw sugar into each hollow end 4. place 1 tbsp butter into each hollow end and dab across the fleshy surface 5. salt & pepper to taste 6. 1/2 tsp vanilla in each hollow end 7. sprinkle more raw sugar over the entire halves 8. tent with tinfoil 9. bake 375*F for 120 minutes, or until the squash is tender and lightly coated with the sugar crust. 10. *****The reason the vanilla is added is to dramatically enhance the natural flavor of the squash. It is DELICIOUS, and adds no distinct vanilla flavor itself. |
