Elaines Asian Beef Noodle Soup |

A delicious Asian beef noodle soup, serves as an appetizer, but hearty enough to be a main dish! Ingredients:
2 cups beef, thinly sliced |
1 cup thinly sliced carrots |
1 package rice noodles |
2 cups beef bouillon |
1 cup chicken stock |
1/2 tsp salt |
2 cups trimmed snow pea pods |
6 green onions, chopped coarsely |
1/2 tsp chinese five-spice powder |
1 tbsp grated fresh ginger or 1 tsp ground ginger |
2 garlic cloves, finely minced |
2 tsp soy sauce |
2 tsp fresh lemon juice |
1/4 tsp sesame oil |
Directions:
1. Bring 2 cups water to boil in a large saucepan. 2. Add the beef bouillon and chicken stock. 3. Reduce heat to simmer. 4. Boiling rapidly will only cloud the broth. 5. Add carrots. 6. Add the peas, onions, garlic, ginger and beef. 7. Simmer 20 minutes. |
