This is my brothers own recipe for a delicious mexican corn. We always serve this on the side of bean burritos smootherd with my enchilada sauce. Ingredients:
2 tablespoons olive oil |
1/2 medium onion, chopped |
1 red bell pepper, chopped |
1 (10 ounce) package frozen corn kernels |
salt and pepper, to taste |
chili powder, to taste |
cumin, to taste |
1/2 lime, juice of, a fresh |
Directions:
1. Heat oil in a large skillet add onion, bell pepper, and salt and pepper. Cook over medium heat until tender, stirring occasionally. 2. Mix corn and cook until hot. Stir in chili powder, cumin, and lime juice. |
