I haven't tried this yet but it's on the menu for this week. I got this one off the message boards also from . It looks like a great side dish to just about any meat or even just eaten by itself for a lunch. Ingredients:
1 1/4 cups brown rice |
1 1/2 cups chicken broth |
1/3 cup lentils |
15 ounces black beans, undrained |
15 ounces corn, undrained |
14 1/2 ounces diced tomatoes, undrained |
1/2 cup onion, chopped |
1 cup salsa |
1 tablespoon chili powder |
Directions:
1. Combine together in a large pot. Bring to a boil, then cover and simmer for about 45 minute stirring occassionally. 2. This recipe freezes well. |
