Ehow Vegan Pumpkin Bread

You'd never know it was vegan! Soft and delicious.
Ingredients:
1/2 cup margarine (or butter)
1 cup sugar
1 cup whole wheat flour
1 cup unbleached flour
1 teaspoon baking powder
1 (8 ounce) can pumpkin
1 tablespoon vanilla extract
1 tablespoon cinnamon
5 tablespoons soymilk
Directions:
1. Preheat oven to 350°F.
2. Mix melted margarine and sugar together in a small bowl.
3. In large bowl, mix all dry ingredients.
4. Add pumpkin puree & sugar mixture to dry ingredients and mix well.
5. Pour into greased loaf pan and put in the oven for about 1 hour. Check with toothpick or chopstick that the center is dry before removing.
6. Let cool for at least 30 minutes and serve.
