Here is another easy and quick breakfast casserole. Dave really liked this one. Ingredients:
6 eggs |
2 cups shredded monterey jack cheese |
1/2 cup cottage cheese |
1/4 cup butter, melted |
1/3 cup all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon kosher salt |
fresh ground pepper |
1 (10 ounce) can original rotel diced tomatoes and green chilies, drained |
Directions:
1. Preheat the oven to 350 degrees. 2. Lightly oil a 10 inch pie plate. 3. Beat the eggs in a large mixing bowl. 4. Stir in the Monterey Jack, cottage cheese, butter, flour, baking powder, salt and Rotel tomatoes. 5. Pour into the baking dish, and bake for 40-45 minutes, or until the eggs are set. 6. Cool for 10 minutes. 7. Cut into squares and serve with salsa. |
