EGGS IN TOMATO SAUCE This recipe comes from my Aunt Charlene’s collection. I obtained this recipe when I inherited the family collection in 1980 which dates back to the 1800’s. Ingredients:
1 large white onion finely chopped |
4 eggs |
cooking oil |
6 medium tomatoes |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. In large frying pan sauté onion until lightly browned. 2. Grate tomatoes on largest holes of a grater. 3. Mix grated tomatoes and onion then cover and cook over low heat 25 minutes. 4. Remove cover and break eggs over the surface. 5. Stir gently to break yolks then cover and cook 4 minutes until eggs are set. 6. Sprinkle with salt and pepper then serve. |
