Eggs in Roman Red Sauce

Ingredients:
2 tablespoons olive oil
1/2 cup onion
1/2 cup mushroom
2 garlic cloves
1 canned tomato
1 dash salt and pepper
4 eggs
Directions:
1. Saute onion, mushrooms and garlic in oil. Add tomatoes, salt and pepper.
2. Cook on simmer only 20 minutes.
3. For sauce with eggs, crack 2 eggs per person into sauce and let eggs poach. Serve in red sauce with french bread.
