This is a great breakfast that I discovered in one of my favorite health food cafes. Ingredients:
8 eggs |
4 avocados, peeled and sliced in half |
1 cup salsa |
2 ounces grated cheddar cheese |
1/3 cup sour cream |
1/3 cup sliced black olives |
lettuce, for garnish |
cilantro, for garnish |
Directions:
1. Cook eggs any way you like them. 2. Arrange 4 plates by placing a bed of lettuce on the plate and topping with avocado halves, 2 per plate. 3. Place one egg in each avocado half. 4. Cover eggs with salsa and sprinkle with cheese. 5. Top each avocado with a dollop of sour cream and a sprinkle of black olive slices. 6. Garnish with fresh cilantro. 7. Goes great with warm tortillas. |
