EGGS BENEDICT OVER ENGLISH MUFFINS DATED 1951 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bowers Estate in Fort Worth, Texas I 1994. Notation on card indicates this was Bubbie’s favorite breakfast. Ingredients:
4 english muffins |
8 slices canadian bacon |
8 eggs |
2 avocados |
1 cup mayonnaise |
2 tablespoons lime juice |
hot sauce to taste |
Directions:
1. Toast muffins then place 2 halves on each plate. 2. Lightly sauté bacon and top each muffin half with a slice. 3. Poach eggs and top each slice of bacon with 1 egg. 4. Mash avocados and whip in mayonnaise, juice and hot sauce with whisk until smooth. 5. Pour over eggs Benedict. |
