Eggs Baked With Leeks And Tarragon

Great Brunch Dish
Ingredients:
1/2 stick butter
3 leeks, white and light green part, coarsely chopped and cleaned
1 1/2 cups gruyere cheese, grated
1/2 cup parmesan cheese, grated
8 large eggs
2 cups whipping cream
1 1/2 tsp. dried tarragon
salt and pepper to taste
Directions:
1. Preheat oven to 375
2. Butter 9x13 glass baking dish with 1 tbls. butter
3. Melt remaining 3 tbls. butter in skillet
4. Add leeks and saute until tender, about 5 minutes
5. Spread on bottom of baking dish
6. In mixing bowl, add cheeses and mix together
7. Sprinkle 1/2 cup cheese onto leeks
8. In mixing bowl, whisk eggs, cream, tarragon, and salt and pepper
9. Pour into baking dish
10. Bake about 30 minutes, top golden brown and eggs set
11. Sprinkle remaining cheese over top
12. Bake until cheese melts, about 5 minutes
