Eggs and Tomatoes Florentine |

Not only delightful for breakfast but makes a great brunch item as well! Clipped out of a magazine years ago and only tried it for the first time a few years ago for Christmas morning with great results and pleasure. Ingredients:
2 (10 ounce) packages frozen creamed spinach |
8 eggs |
1/4 cup sour cream |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/4 teaspoon nutmeg |
2 medium ripe tomatoes, sliced |
1/4 cup grated parmesan cheese |
Directions:
1. Preheat oven to 400 degrees. 2. Butter 10 x6 or 8 square baking dish. 3. Cook spinach according to pkg. 4. directions. 5. Meanwhile, in blender combine eggs, sour cream, salt, pepper and nutmeg. 6. Blend 1 minute. 7. Pour into baking dish. 8. Bake until set, 10 to 12 minutes. 9. Remove from oven. 10. Preheat broiler, spoon cooked spinach over egg layer. 11. Arrange tomatoes over spinach. 12. Sprinkle with cheese. 13. Broil 2 to 3 minutes or until lightly browned. |
