A breakfast or lunch dish great with crusty Italian bread. You will not believe the great combination of flavors!! Ingredients:
6 eggs |
1 tbsp olive oil |
1/2 onion diced |
2 plum tomatoes, chopped |
1 small can of peas |
Directions:
1. Heat a 10 non stick skillet medium heat 2. Add and heat oil 3. add onion and saute until soft 4. add chopped tomato and juices, saute for 1 minute 5. add peas as a top layer, don't mix 6. crack eggs on top, 5 around and one in the middle 7. (I usually crack them into a small bowl first, then drop gently over mixture) 8. Cover and cook until whites harden but yokes remail runnyspoon egg and mixture on to plates. Serve with toasted crusty bread. |
