This dish is a favorite with me and mine. Plus it doesn't have to be just breakfast. Ingredients:
3 t. minced onion |
3/4 c. minced green pepper |
2 t. butter |
5 c. diced, cooked corn beef (one 12 oz can = 2 cups) |
2lb bag frozen diced potatoes (hash brown , diced), thawed |
1/2 tsp. pepper |
12 eggs, poached |
salt and pepper to taste |
Directions:
1. Saute' onion and green pepper in butter until tender 2. Mix with corned beef, potatoes and pepper 3. Mash until well mixed 4. Flatten out on wax paper to about a 1 inch thickness 5. Cut into 12 large circles 6. Brown on both sides 7. Top each with a poached egg 8. NOTE: Hash circles can be prepared in advanced and refrigerated until ready to cook |
