Eggplant With Garlic And Basil |

This is an awesome way to eat eggplant. It is so tasty yet so easy to make. Enjoy Ingredients:
2 medium eggplants |
1 teaspoon salt |
1/4 cup olive oil |
3/4 cup chopped fresh basil |
4 cloves garlic finely chopped |
1/4 cup red wine vinegar |
Directions:
1. Cut eggplants lengthwise in slices 1/4 thick. 2. Sprinkle with salt and allow to stand 1 hour then rinse and pat dry. 3. Heat oil in heavy skillet then sauté 1 slice eggplant until golden on both sides. 4. Place cooked slice on plate and sprinkle with basil, garlic, salt and vinegar. 5. Repeat with remaining slices building up several layers of cooked eggplant on plate. 6. Let stand thirty minutes at room temperature then chill. 7. Serve as salad or side dish. |
