This dish uses a combination of grill and stir frying. the eggplant slices are grilled first then stir fried. this brings a sort of grilled taste to the recipe Ingredients:
3-4 eggplants/aubergine |
1 bok choy |
3 tbsp small dried shrimps, soaked |
1 onion |
2 garlic cloves |
fish sauce to taste |
lemon juice to taste |
pepper to taste |
1 tbsp oil |
Directions:
1. slice the eggplants and grill them, brushing the slices with a little bit of oil. 2. In the meantime, slice the onion, chopped the bok choy into fairly big sizes, pass the garlic through the garlic press. 3. Put the grilled eggplant slices aside. 4. stir fry the dried shrimps, add the garlic and onion, cook for a few seconds. 5. add the bok choy, stir try until just wilted and then add the grilled eggplants slices. stir fry gently for a few more seconds. 6. remove from heat and season with pepper, fish sauce and lemon juice. |
