Eggplant With Chicken On Rice |

When I wanted to try eggplant for the first time, this is what I came up with. Ingredients:
1/2 medium/large eggplant |
1 large onion |
1 1/2 tablespoons brown sugar |
3 tablespoons olive oil |
a bit of chili, cinnamon and sage |
salt and pepper |
1 cup diced cooked chicken |
prepared rice |
mozzerella cheese |
Directions:
1. Dice eggplant, sprinkle with plenty of salt and leave in strainer for half an hour. 2. Chop onion. 3. Saute eggplant and onions in oil and sugar. 4. Add prepared chicken and spices, heat through. 5. Serve on rice. 6. Sprinkle with a bit of grated mozzerella cheese. |
