This is a nice tasty eggplant recipe that is good as a side or good mashed and used as a dip. Enjoy Ingredients:
2 large eggplants unpeeled and diced |
2 large tomatoes diced |
2 large onions finely chopped |
2 tablespoons oil |
2 teaspoons salt |
1 teaspoon freshly ground black pepper |
Directions:
1. In a large frying pan sauté onion in the oil until it is translucent. 2. Add spices and stir 1 minute then add eggplant and tomato then stir well and cover. 3. Reduce heat and simmer until vegetables are mushy about 30 minutes. 4. Remove lid and continue cooking until most of the liquid evaporates about 15 minutes. |
