Fresh eggplant, tomatoes, and onion come together to make a delicious side dish! Slice the vegetables as thick or thin as you like, but keep all the slices the same size to ensure even cooking. Ingredients:
1 eggplant, sliced |
2 tomatoes, sliced |
1 sweet onion, sliced |
1/4 cup butter, melted |
1 teaspoon dried basil |
1 teaspoon sea salt |
8 ounces shredded italian cheese blend |
1 cup dry breadcrumbs |
Directions:
1. Preheat oven to 450. 2. Toss bread crumbs with 2 tablespoons melted butter; set aside. 3. In a 9x11 baking dish, layer eggplant, then tomatoes, then onion. 4. Drizzle with remaining butter, sprinkle with salt & basil. 5. Cover pan with foil, bake 30 minutes. 6. Remove foil & sprinkle with cheese and buttered bread crumbs. 7. Bake, uncovered, another 10 minutes. |
