Goes good with bread or on crackers My family loves it! Ingredients:
1 med. eggplant |
3 tbls minced onion |
2 tbls salad or olive oil |
4 tbls lemon juice |
1 1/2 tsp salt |
1/4 tsp pepper |
1 tsp sugar |
Directions:
1. Pierce Eggplant with a fork acouple of times to avoid bursting in the MIcro Wave oven 2. Bake eggplant in Micro. oven approx 6 min or until soft 3. Cool & peel 4. Chop eggplant in food processer until very smooth 5. Add & Stir in the onion, oil, lemon juice, salt, pepper & sugar. 6. Chill, 7. Serve with bread, or crackers add wedgesof tomatoes. |
