Eggplant Roll-Ups

Very tasty and healthy as a snack, side dish, or main course.
Ingredients:
2 cups tomato sauce (spaghetti sauce is perfect)
120 g crumbled feta
1000 g eggplant (two large ones = about 2.5 lbs)
1 pepper
Directions:
1. Slice eggplant into 1/4-1/2 inches slices (you should have 8 regular slices and 4 irregular smaller slices from the edges), and sprinkle with pepper. Bake in 350degrees oven for 10-15 minutes on each side, or grill until soft enough to roll. Spread half tomato sauce on eggplant pieces and sprinkle with crumbled feta. Roll each piece of eggplant, place in a baking dish in one layer, spread the rest of tomato sauce in the top and bake in the 350 oven for 15 minutes. Serve hot or room temperature.
