Eggplant Parmigiano

Sinfully high in calories, but delicious.
Ingredients:
1 eggplant
2 eggs, beaten
1 tablespoon olive oil
1/2 lb grated mozzarella cheese
1/2 cup parmesan cheese
1/2 cup flour
1 quart marinara sauce or 1 quart spaghetti sauce
Directions:
1. Slice eggplant lengthwise, aps 1/4 thick.
2. Coat slices in flour, then dip in beaten egg.
3. Fry in Olive Oil until browned and tender.
4. Make layers in a casserole dish with eggplant, then sauce, then mozzarella.
5. Top with parmesan cheese.
6. Bake, uncovered 350 degrees for 40 minutes.
