6 lrg tomatoes chopped or 28oz can crushed tomatoes |

1 teaspoon(s) oregano |

1 tablespoon(s) olive oil |
1 small onion chopped |
1 teaspoon(s) chopped basil |
1/8 teaspoon(s) crushed red pepper |
Directions:
1. pelled slice eggplant 1 in thick dip in eggsplant bread and egg again place on baking sheet 400 dgrees x 25min preheat 500 degrees place eggplant in a baking dish 1/2 cup marinara scoop of ricotta, sprinkle with parmesan, slice of mozzarella, place broccoli, and mushroom around eggplant, place in oven 500 degrees x 15min, bake until melted and begins to brown |
