Home-made eggplant parmesan. Very quick and easy Ingredients:
1 eggplant |
2 cups marinara sauce |
2 cups reduced fat mozzarella cheese |
1 cup seasoned bread crumbs |
1/2 cup light miracle whip |
1 tsp parsley |
6 oz dry spaghetti |
Directions:
1. Peel and slice eggplant into 1/4-1/2 slices 2. Coat with Miracle Whip 3. Roll in bread crumbs 4. Broil in single layer on baking sheet until golden brown (2-4 min) 5. Flip eggplant slices and brown other side 6. Make spaghetti using package directions 7. Preheat oven to 375° 8. Layer thin layers of eggplant, marinara, and cheese in 9 x9 baking dish until eggplant is used up. 9. Bake for 15 minutes covered 10. Remove cover, bake additional 15 min 11. Serve spaghetti with eggplant as a topping |
