All in one skillet meal of breaded eggplant and salt free tomato sauce. Ingredients:
1 medium eggplant, peeled and sliced |
1/4 cup soy flour |
1/4 cup brown rice flour |
2 tablespoons olive oil |
8 oz tomato sauce, no salt |
1/4 cup grated cheddar cheese |
Directions:
1. Heat oil in skillet. Dip eggplant slices in water and dredge lightly in flours. Fry and remove. When all is fried, layer slices, tomato sauce and cheese. Done. |
