pan fried eggplant parm Ingredients:
1 large eggplant (20 oz) |
1 large egg |
1 cup italian breadcrumbs |
1 tsp oregano |
1 tsp basil |
1 cup marinara sauce |
1/2 cup mozzarella cheese |
2 tbs olive oil |
Directions:
1. slice eggplant into 1/4 to 1/2 in slices 2. beat egg 3. dip eggplant slices into egg, then into breadcrumbs 4. In a large skillet, heat olive oil 5. brown eggplant in oilve oil 6. layer sauce and eggplant slices with a sprinkle of mozzarella cheese adding spices to each layer 7. top with remaining sauce and cheese 8. Bake at 350 for 30 minutes |
