Lighter version of eggplant parmesan Ingredients:
1 eggplant, medium |
6 oz tomato sauce |
1 t garlic powder |
1/2 c breadcrumbs, panko |
1 t italian seasoning |
2 t mozzarella cheese, shredded |
2 t parmesan cheese, grated |
Directions:
1. grill eggplant til tender 2. lightly coat with sauce, dip into breadcrumbs (add seasonings to crumbs) 3. place in oven safe shallow container - sprinkle with cheeses 4. bake for 10-15 minutes at 350 until cheese melts and lightly golden |
