Ingredients:
1 eggplant
1 cup nonfat cottage cheese
1/2 cup egg whites
1/2 cup tomato sauce
1 onion
1 tbsp dry basil
1 tbsp oregano
1 tsp crushed red pepper
1/2 cup mozzarella cheese
Directions:
1. slice eggplant length-wise and layer
2. mix cottage cheese with seasoning, egg whites and pre-sauteed onions
3. season tomato sauce and pour over each layer
4. bake
