Southeast Asian Specialites, Konemann, good cookbook. Ingredients:
1 lb eggplant, asian, sliced diagonally |
2 chili peppers, seeded sliced, 1 green 1 red |
1 onion, chopped |
2 tablespoons oil |
4 limes, juice of |
Directions:
1. In a mortar and pestle, crush chili peppers and onion to make a paste; a food processor would work. 2. Fry eggplant in oil until half cooked; remove eggplant. 3. Add paste; cook until aromas develop. 4. Add eggplant. 5. Add lime juice; mix well; serve. |
