This eggplant side dish is an easy way to get your vegetables in! Ingredients:
1 small eggplant, peeled and cubed |
water for boiling eggplant |
1 egg, beaten |
1 small onion, grated |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1/3 cup whole wheat flour |
1 teaspoon baking powder |
2 tablespoons milk |
oil and skillet for frying |
Directions:
1. Place peeled and cubed eggplant in enough water for boiling until tender, about 10 minutes covered 2. Drain well and mash the eggplant when done 3. Stir in egg, onion, salt, and pepper 4. Mix flour and baking powder, and stir into eggplant mixture 5. Add enough milk to make a drop batter 6. Drop batter by tablespoons into oil heated to 360 degrees or over a medium heat 7. Cook until brown and drain on absorbent paper |
